Throughout the day you’ll stop to eat the food you’ve cooked in our private dining room with everyone else. A chance to share your experiences in creating the dishes as well as great food and a glass of wine.
(Please note, we reserve the right to alter the dishes covered in the course, to meet the dietary requirements of our guests).
Techniques learnt
- How to balance spices and flavours across a range of traditional Spanish and Mediterranean dishes
- How to make a range of starters, main courses and tapas style dishes, perfect for easy entertaining at home
- How to make a traditional Spanish Empanada
This day long course is designed to give you total confidence in using all of these techniques. The aim is that you can go home and repeat the recipes for family and friends time and again.
Your chef tutor
The expert chef teaching this Spanish cooking class, Jenny Chandler, has published two books on the subject of Spanish food. She has a history of travelling the Mediterranean, eating in the name of research and good food. Jenny has worked as a chef on a yacht, a food picker, a restaurant consultant, restaurant manager and eventually food blogger, writer and instructor. Jenny is keen to share her knowledge and passion for Spanish cuisine.

We’ll make the dough for this classic Galician dish and allow this to prove before rolling it out and filling with a delicious potato based filling and baking in the oven. This is a great street food snack and highly versatile with different vegetarian and meat based fillings.Jenny will demonstrate how to make an authentic Tortilla Espaňola. By thinly slicing waxy potatoes and frying in a good quality olive oil the end result will be delicious and enjoyed as a snack in the kitchen.<td/.

This butter bean dish, flavoured with garlic, fresh herbs, lemon and piquillo peppers will accompany the lamb in our second lunch of the day.After enjoying some meringues with cream, we will pack up the remainder of our goodies to go home. Guests leave through the glorious countryside of the Catton Estate with knowledge, inspiration and flavours to try again at home.

3 | Lamb Marinade
We begin the day by marinading the Lamb which will be cooked later in the day. Marinated in a smoked paprika rub with olive oil and fresh herbs, this will be a delicious accompaniment to our Spanish feast at the end of the day. |

4 | Soplillos de Granada – Almond Meringues
Jenny will demonstrate how to make light as a feather, lemony meringues with chopped almonds in the centre. These are a crowd pleasing and easy dessert, served with raisins soaked in Pedro Jimenez sherry – absolutely heavenly and one of our favourite crowd pleasing easy desserts. |

5 | Galician ‘Pie’

This aubergine dish is an art of spicing and seasoning. Using a handful of simple ingredients the end result is far greater than the sum of it’s parts. Enjoyed for lunch with home-made bread and pan con tomato, these are classic Spanish tapas style dishes. |

About your day
Our cookery courses take place on the Catton Hall Estate. On the picturesque Derbyshire and Staffordshire border, we are only minutes from the A38. We also have plenty of free parking.
You’ll have the support of our “kitchen fairies” who’ll ensure you have everything you need. We’ll provide an apron for the day, and all the equipment and ingredients.
You’ll be sitting down together during the day to eat the dishes you’ve created. We’ll also provide wine and soft drinks.
Our day courses run from 10.15am to 4pm. Join the team for early morning refreshments from 10am.
