- Spaghetti e polpette al sugo – fresh durum wheat pasta with meatballs & a tomato ragu
- Caponata served with swordfish and cous cous – a delicious Sicilian staple of spiced sweet & sour aubergines
- Pesto alla Trapanese – Tomato & Almond pesto
- Amaretti biscuits

By the end of the course, you will have mastered these key techniques:
- The art of caponata – a delicious sweet and sour vegetable base, perfect to be served with fish, meat or pasta
- How to create an authentic Sicilian pesto
- How to cook swordfish
- How to make meatballs
- How to make amaretti biscuits
This day-long class is designed to give you total confidence in using all of these techniques. The aim is that you can go home and repeat the recipes for family and friends time and again.
Your chef tutor
Your one-day Sicilian cookery course will be led by chef Sara Danesin Medio. Sara is a 2011 BBC Masterchef finalist, whose primary area of expertise is exceptional Italian and Sicilian cuisine. She blends her heritage with modern cooking techniques to create stylish, appealing, delicious dishes.
Sara believes in sharing her passion and skills, and stresses the benefits of using quality ingredients, a professional presentation, and a dash of creativity. Sara’s traditional Italian heritage can be clearly seen in her style of cooking. Some of Sara’s fondest childhood memories include hunting for wild asparagus and mushrooms with her father. They’d then use those foraged ingredients to create beautiful dishes for her family.
About your day
This Sicilian cookery course will teach you how to make an authentic Sicilian meal from scratch. Sara will guide you through the day with a series of demonstrations giving you the confidence to recreate these dishes back at your own work stations.
Not only will you make traditional Sicilian dishes, such as arancini and sardine in beccafico, you will also have the opportunity to ask any food questions you may have, as well as any burning question you may have about what goes on behind the scenes of Masterchef.
