Pig Butchery Course Overview
Our ‘Pig in a day’ course will introduce you to the carcass of a whole pig. Whether you have your own pigs at home and looking to gain confidence with primary cuts or would like to be able to order specific joints from a butcher to make your own porky products at home, this pig butchery course will teach you all the necessary skills to do this.
Working in a small group, you’ll be introduced to the basic principles of butchery and learn to make your own sausages, air-dried ham, brawn, bacon and chorizo. Everyone will have a go at the basic butchery before making and cooking their own pork dishes.
Skills & recipes include:
- Basic pig butchery
- How to make sausages
- Dry cure bacon
- Prosciutto style ham
- How to make liver pate & a range of recipes ie brawn & devilled kidneys
You’ll enjoy a delicious lunch of the pork dishes you have cooked and additional side dishes. Also, you’ll be taking home sausages and chorizo to enjoy with friends and family at home.

Your Chef Tutor
Steven Lamb is a writer, cookery teacher, and an expert in meat butchery. Steven has recently written the River Cottage Handbook to Curing and Smoking and the River Cottage Cheese Handbook. We are delighted to have Steven as part of the Seasoned team teaching our pig butchery course.
About your day
This pig in a day butchery course will take place at Seasoned Cookery School. The day will be a mixture of chef demonstrations, hands on cookery and learning from a master so that you can recreate the skills and cookery techniques again at home.
Throughout the course, you will be supported by the infamous team of Seasoned ‘kitchen fairies’. Everything on the day will be provided, including lunch, wine and soft drinks.
Our day courses run from 10.15am to 4pm. Join the team for early morning refreshments from 10am.
