About the Course

This one day patisserie course covers techniques to enable you to take your patisserie skills to the next level. You will be taught how to make traditional patisserie using different flavour combinations and techniques that you will use time and again.

Your chef for this patisserie course will be Will Torrent. Will is an award winning pastry chef who was trained by Heston Blumenthal and has subsequently worked with some of the world's finest chefs. Will is the author of three fantastic baking books including 'Patisserie at Home'.  Will's passion and friendly approach will make this a fun filled and action packed day, ideal for keen bakers. 

Techniques you will learn on this pastry course:

- How to make a multiple layer cake

- How to make Italian buttercream and Italian meringue 

- How to make chocolate ganache and chocolate glaze

- How to make pastry and a delicious frangipane

- How to make a curd filling 

- Presentation techniques to get your bakes looking precise every time

Recipes on this patisserie course:

- Gateaux Opera

- Apricot, almond and lavender almondines

- Lemon & passionfruit meringue tart with a twist

Lunch is provided on this patisserie course as well as all equipment you will need for the day. For baking courses, we just ask that you bring three large biscuit tins to take your freshly baked goodies home in. You will leave with them brimming with delicious creations to impress friends and family with!

All of our baking and cookery courses take place at our cookery school on the Catton Hall estate on the Derbyshire / Staffordshire border. With excellent transport links and ample free parking we are a convenient location for guests visiting from around the country.
