Outdoor Cookery Course Overview
This outdoor cookery course will be lead by Outdoor cookery enthusiast Steven Lamb. We aim to equip you with the skills needed to cook outside in a variety of ways, whether you want to cook on a charcoal BBQ, make an open wood fire, hot smoke outside or clay bake delicious vegetables. You’ll learn about the range of wood on offer, it’s qualities and how it contributes to the final flavour of the food you cook.
Skills & recipes include:
- Learning the principles of wood fire and charcoal cooking
- The importance of sourcing appropriate wood and how to manage your fire
- Trussing a leg of lamb
- Argentinian style Chicken for roasting over the fire pit
- Roast & smoke a whole planked fish over the fire pit
- How to make & cook flatbreads, roast tomatoes and salads
- How to salt and clay bake seasonal vegetables in the embers of the fire
You’ll enjoy a delicious lunch of the dishes you have cooked along with a feast at the end of the day.
Steven Lamb is author of The River Cottage Handbook of Curing and Smoking joining Seasoned for this course as a seasonal special in addition to his Pig in a day course and Charcuterie & Curing course.
(Please note, vegetarians are welcome, but the Lamb & Chicken dishes will not have vegetarian alternatives)
Your Chef Tutor
Steven Lamb is a writer, cookery teacher, and an expert in curing, cheese making & artisan style produce. Steven has recently written the River Cottage Handbook to Curing and Smoking and the River Cottage Cheese Handbook. We are delighted to have Steven as part of the Seasoned team and look forward to this seasonal special.
About your day
This Outdoor cookery course will take place within the kitchens & outside cookery area at Seasoned Cookery School. The day will be a mixture of chef demonstrations, hands on cookery, tending to the different fires and creating delicious food that you will enjoy through the day and then recreate again at home.
Throughout the course, you will be supported by the Seasoned ‘kitchen fairies’. Everything on the day will be provided, including lunch, wine and soft drinks.
This Outdoor cookery day will run from 10.15am to 4pm. Join the team for early morning refreshments from 10am.
