Course Overview

Join us for an action packed Malaysian and Thai cookery class full of regional cuisine inspired by the street food culture in Asia.  From a light and fragrant Tom Yum soup to a rich and hearty beef or jackfruit rendang, you will learn how to create authentic Malaysian and Thai dishes which are sure to become favourites in your home kitchen.

Your chef for this one day course is Jackie Kearney, 2011 BBC Masterchef finalist. Jackie was acclaimed by the Masterchef judges for her fabulous flavours and delicious Thai and Malaysian dishes. Jackie is a best-selling author and passionate about vegetarian dining, inspired by her extensive travels across Asia.

  • Beef rendang (or jackfruit rendang)
  • Murtabak: Malaysian stuffed crispy pancake
  • Chilli sambal: a fiery hot dipping sauce
  • Tom Yum hot and sour soup
  • Thai green curry paste
  • Pad Thai

This course can be made suitable for vegetarians, but please notify us upon booking.

Throughout the day you’ll stop to eat the food you’ve cooked in our private dining room with everyone else. A chance to share your experiences in creating the dishes as well as great food and a glass of wine.

  • How to make an authentic Malaysian curry (with meat and vegetarian options)
  • How to make a light, fragrant Thai soup
  • Create delicious street food style snacks
  • Learn the secrets of perfecting perfect Thai green curry paste and a traditional Thai curry
  • How to make Pad Thai, a quick, tasty and versatile stir-fried noodle dish
  • Creating a chilli sambal which will spice up any Asian dish in your kitchen

This day long course is designed to give you total confidence in using all of these techniques. The aim is that you can go home and repeat the recipes for family and friends time and again.

Your chef tutor

Jackie made a name for herself on the 2011 series of Masterchef where she was a top four finalist, wowing judges with her Thai and Malaysian food.  Since then Jackie has taken up a full-time career in food, doing bespoke catering and food writing, and has taught at Seasoned since 2011. Her book, Vegan Street Food, was voted one of the top 10 vegan cookbooks by the Independent and was a best seller on Amazon.  Jackie’s vibrant Malaysian and Thai influences will ensure you have a fun filled, action packed day. You will leave inspired to fill your home kitchen with the smells and taste of Asia.

About your day

Our cookery courses take place on the Catton Hall Estate. On the picturesque Derbyshire and Staffordshire border, we are only minutes from the A38. We also have plenty of free parking.

You’ll have the support of our “kitchen fairies” who’ll ensure you have everything you need. We’ll provide an apron for the day, and all the equipment and ingredients.

You’ll be sitting down together during the day to eat the dishes you’ve created. We’ll also provide wine and soft drinks.

Our day courses run from 10.15am to 4pm. Join the team for early morning refreshments from 10am.
