About the Course

Join us for this one day Japanese cookery course, where you will learn how to mastering the flavours, skills and techniques of Japanese cuisine.

Your Chef for the day is Andrew Kojima, 2012 Masterchef finalist. Half Japanese, half Scottish, Andrew's cooking is renowned for adventurous and fusion flavour combinations which he is keen to pass on to enthusiastic cooks.

Techniques you will learn on this cookery course:

- How to make sushi rice, and essential Japanese technique

- How to fill and roll sushi with a variety of delicious traditional fillings

- The importance of Japanese cuisine staples including: dashi, miso and mirin

- Japanese fusion, how to transfer flavour combinations and techniques and use them in other cuisines 

Dishes on the day will be: *

- A variety of sushi using various different fillings 

- Miso marinated cod

- Miso soup

- Salmon Sashimi

- Salmon & avocado maki sushi rolls

- Pork gyoza with spicy dipping sauce

- Chicken and leek yakitori

Lunch is provided on all Japanese cookery course as well as all equipment and aprons to use on the day. Most of the food will be consumed on the day and you will leave with the knowledge to recreate it all at home.  Andrew will demonstrate all of the dishes & you will recreate most of them on your own, with some components done in pairs to mean that you can get the most out of the day.

All of our cookery course take place at our cookery school on the Catton Hall estate on the Derbyshire / Staffordshire border. With ample free parking our location is easy to find.

Please inform us when booking onto the course if you have any allergies, dietary requirements or are vegetarian.  Please note however that we are not always able to cater for severe dietary requirements.
