Recipes Learnt
Throughout the day, you will learn to cook all of these delicious recipes with Italian chef Sara Danesin Medio, and you will be able to taste your own creations as you go along:
- Seasonal game risotto with pancetta
- Spinach, ricotta and truffle ravioli with beurre noisette
- Aubergine alla parmigiana made with an accompanying fresh pesto
- Mango panna cotta with black olive caramel, and a passion fruit glaze
Techniques learnt
By the end of the course, you will have mastered the essential techniques of Italian cooking, namely:
- Creation of traditional Italian pasta from raw ingredients, with the use of a pasta machine
- Making fresh Italian-style pesto
- How to prepare a flavoursome stock from scratch using seasonal ingredients and a delicious risotto
- Dessert creation, including creating panna cotta from scratch
Your Chef Tutor
Your one-day Italian cooking class will be led by chef Sara Danesin. A 2011 BBC Masterchef finalist, Sara’s primary area of expertise is exceptional Italian food. She blends her Italian heritage with modern cooking techniques to create stylish and appealing Italian dishes. Teaching with Seasoned for the past five years, Sara has touched the hearts, and stomachs, of hundreds of our customers.
Sara believes in sharing her passion and skills, using quality ingredients, a professional presentation, and a dash of creativity. Her traditional Italian heritage can be clearly seen in her cuisine, with its roots in her childhood experiences of foraging for things like wild asparagus and mushrooms.

1 | Welcome and morning refreshments
Arrive at the cookery school after a short drive through the Catton Estate. Our team of kitchen fairies will welcome you with freshly baked biscuits and you can browse your recipe packs for the day whilst chatting to your fellow course participants. |

2 | Introductions
Your chef for the day is Masterchef finalist Sara Danesin. Sara is passionate about sharing her Italian heritage within her recipes together with beautiful presentation for the perfect plate of food |

3 | Mango Mousse
We begin with our dessert for the day, a creamy yet light mousse. Discover how to get that perfect set and texture for a mousse. Sara will also demonstrate how to make a delicious and unique black olive caramel to compliment this dish. |

4 | Pigeon Butchery
Learn amazing knife skills under Sara’s expert tuition. You will get to butcher your own pigeon which will be used within your risotto dish. |

5 | Risotto
You will prepare your own, fresh stock for your risotto. Perfectly cook your pigeon in two different ways; pan fried breasts and confit legs to add another depth of flavour to your dish. |

6 | Lunch
Relax and enjoy your risotto with a glass of wine in our dining room. |

7 | Aubergine Parmigiani
A demonstration of how to make a delicious aubergine dish together with a fresh and fragrant pesto sauce. This is an Italian side dish staple and perfect for use as a vegetarian alternative to lasagne. |

8 | Spinach & Ricotta Ravioli
Sara will demonstrate how to make the perfect pasta from scratch together with how to shape it make delicious ravioli. You will then get to make your own pasta, fill it with a delicious spinach and ricotta filling and finish with a beurre noisette sauce |

About your day
Our cookery courses take place on the Catton Hall Estate. On the picturesque Derbyshire and Staffordshire border, we are only minutes from the A38. We also have plenty of free parking.
You’ll have the support of our “kitchen fairies” who’ll ensure you have everything you need. We’ll provide an apron for the day, and all the equipment and ingredients.
You’ll be sitting down together during the day to eat the dishes you’ve created. We’ll also provide wine and soft drinks.
Our day courses run from 10.15am to 4pm. Join the team for early morning refreshments from 10am.
