Italian cuisine is one of the most loved all around the world. From silky smooth pasta with sumptuous fillings to light as a feather focaccia with seasonal flavours, everyone has a favourite. Our introduction to Italian cooking allows you to master the different key techniques of Italian cuisine in a one day course. The day is perfect for keen cooks looking to expand their repertoire or novices who want to explore the flavours and techniques of Italian food. Taught by Jenny Chandler, an expert in Mediterranean cuisine, the day will be a trip around Italian tastes and flavours. You’ll leave inspired, with the confidence and skills to recreate all of the dishes in your own kitchen.
Throughout the day, you will learn to cook the following delicious dishes.
- Ravioli with pumpkin filling
- Tuscan harvest focaccia
- Saltimbocca with sauteed greens; the classic veal, prosciutto and sage rolls so popular all over Italy
- Baked apples with amaretti
As you cook the dishes, you’ll get to enjoy what you’ve made along with a glass of wine in our private dining room. You’ll also get to take your own focaccia home.

- How to make fresh pasta
- How to make filled pasta, e.g. ravioli, tortellini
- Bread making and creating a flavoursome focaccia with a superb crumb

This day long course is designed to give you total confidence in using all of these techniques. The aim is that you can go home and repeat the recipes for family and friends time and again.
Your chef tutor
Jenny has worked in different areas of Italy as a private chef on yachts and now specialises in Mediterranean cuisine. She is also a well-respected author and food writer. Jenny teaches at some of the best cookery schools in the country, sharing her knowledge and passion for simple, truly delicious food. Her recipes are sure to become family favourites when you recreate them at home. She’ll share information throughout the day about how you can vary flavours with changing seasonal food.
About your day
Our cookery courses take place on the Catton Hall Estate. On the picturesque Derbyshire and Staffordshire border, we are only minutes from the A38. We also have plenty of free parking.
You’ll have the support of our “kitchen fairies” who’ll ensure you have everything you need. We’ll provide an apron for the day, and all the equipment and ingredients.
You’ll be sitting down together during the day to eat the dishes you’ve created. We’ll also provide wine and soft drinks.
Our day courses run from 10.15am to 4pm. Join the team for early morning refreshments from 10am.
