Course Overview

Discover the joy of the flavours of Asia even if you or a family member have a gluten or wheat free diet. This one day fresh and tasty Asian vegetarian cookery course will teach you a variety of delicious dishes which are also all free from wheat and gluten. With a focus on fresh and fragrant ingredients, you’ll discover that free from does not mean missing out on great flavours.

The day is led by David Bailey, a highly experienced chef, and co-author of the vegan cookbook, “The Fresh Vegan Kitchen”. Spend the day learning new skills and recipes, as well as getting to sit down and eat your creations during the day, along with a glass of wine or soft drinks.

Recipes learnt

  • Hot aubergine salad
  • Betel leaf aromatic Thai salad
  • Massaman curry served with short grain brown rice, kimchi pickle and flash steamed greens
  • Silken tofu chocolate mousse
  • Superfood power balls

(Please note we reserve the right to alter the dishes covered in the course if required to meet the dietary requirements of our guests).

Throughout the day you’ll stop to eat the food you’ve cooked in our private dining room with everyone else. A chance to share your experiences in creating the dishes as well as great food.

Techniques learnt

  • How to make delicious Asian inspired vegetarian, gluten free & wheat-free dishes
  • Learn how to combine spices and flavour combinations to make a free-from curry
  • How to make flavoursome energy balls
  • How to make a scrumptious vegan dessert

This day long course is designed to give you total confidence in using all of these techniques. The aim is that you can go home and repeat the recipes for family and friends time and again.

Your chef tutor

This Fresh Asian cookery course is taught by David Bailey, a trained chef who has worked for over eighteen years in a number of leading restaurants across the UK. This includes some of the top vegetarian restaurants in the country. David also has vast experience of teaching vegetarian, vegan and raw food classes throughout the UK. David and his wife Charlotte have also written a vegan cook book, ‘The Fresh Vegan Kitchen’. He now runs an award winning street food business ‘Wholefood Heaven’. 

About your day

Our cookery courses take place on the Catton Hall Estate. On the picturesque Derbyshire and Staffordshire border, we are only minutes from the A38. We also have plenty of free parking.

You’ll have the support of our “kitchen fairies” who’ll ensure you have everything you need. We’ll provide an apron for the day, and all the equipment and ingredients.

You’ll be sitting down together during the day to eat the dishes you’ve created. We’ll also provide wine and soft drinks.

Our day courses run from 10.15am to 4pm. Join the team for early morning refreshments from 10am.

PLEASE NOTE – This course is suitable for vegans.

Seasoned cookery courses take place in our purpose built kitchens on the Catton Hall Estate. It’s worth pointing out that there is a working farm and a commercial game shoot on the estate.  Seasoned does offer meat based cookery courses on other days in our kitchens. We hope this won’t affect your enjoyment of the day. We understand that guests with strict vegan beliefs may have possible concerns. Please give us a ring before booking; we’d be happy to discuss.

Lunch is provided on this modern vegetarian cookery course as well as all equipment and aprons for you to use for the duration of the course. Most of the food created will be consumed on the day, and you will leave with the knowledge to recreate it all at home.

Please inform us when booking onto the course if you have any allergies or dietary requirements. Please note however that we are not always able to cater for severe dietary requirements.
