This day long course is designed to give you all the techniques you need to cook fish with confidence. The aim is that you will go home and be confident to use these recipes time and again for family and friends.
- Mediterranean fish soup with spicy rouille and croutons

During the day you will enjoy all the food you have prepared in our dining room with a glass of wine. You will also enjoy tasters of the dishes that Tim demonstrates.

Your chef tutor
Tim Maddams, is a writer, presenter, private chef, cookery teacher, and an expert in cooking fish. Tim is well known for leading the River Cottage team alongside being the lead presenter on Hugh’s Fish Fight on Channel 4. Tim is a regular on Channel 4’s Sunday Brunch and is passionate about teaching people to source and cook sustainable seafood.
About your day
Tim’s Fish Cookery Course will take place at Seasoned Cookery School on the Catton Estate. Although miles from the sea we don’t let this be a hinderance for sourcing amazing sustainable seafood from small fisheries that are located on the Devon coast, close to where Tim is based./span>
Throughout the day our team of “kitchen fairies” will look after all of the washing up, preparation of your equipment and food so that you can focus on enjoying the day.
We provide an apron for the day and recipes for you to take home. During the day you will break for lunch to enjoy the dishes that you have created.
Our day courses run from 10.15am to 4pm. Join the team for early morning refreshments from 10am.
