About the Course

Enriched breads are made from a dough that have butter, cream, eggs and sugar added in, giving a softer and finer texture. Enriched Doughs are often feared in the kitchen, but once mastered make a great foundation dough that's a great addition to a bakers repertoire to use in endless recipes. This one day Festive Bread Baking course will teach you how to make delicious sweet and savoury enriched doughs using a variety of different flavour combinations.

Your chef for the day is Stephanie Clubb.  Stephanie is a Seasoned Cookery School Tutor who is passionate about teaching people to bake interesting and innovative bakes in their own home. Stephanie is also gluten free expert having developed gluten free recipes for one of the country's leading gluten free suppliers.

Techniques you will learn on this Festive Bread Baking course:
- The process of combining the ingredients. 
- Kneading the doughs to develop the gluten.
- The rising and proving of the doughs- Shaping into the final shapes
- When to bake
- How to form and shape dough both supported in tins and free hand
- How to pipe and decorate your finished bakes
- How to make a delicious sweet treat and savoury alternatives
- Suggestions of different flavour combinations

Recipes on this Festive Bread Baking course*:

- Garlic and herb camembert couronne 

- Mincemeat and marzipan Christmas bun tree

- Ginger candy striped ice buns

The perfect baking course for..... people who want to learn how to make versatile enriched doughs using different enrichments and shaping techniques. An ideal course for beginners who want to take their bread making skills to the next level.   

Lunch is provided on this creative bread baking course as well as all equipment and aprons. (For baking courses, we just ask that you bring three large cake tins to take your freshly baked goodies home in).

All of our baking courses take place at our cookery school on the Catton Hall Estate in South Derbyshire.  With excellent transport links to the M6, M1 and M42. We also have ample free parking we are a convenient location for guests visiting from around country.
