Recipes learnt on our desserts courses
Throughout the day, you will prepare all of these delicious desserts:
- Will’s ‘ultimate’ salted caramel chocolate mousse with cocoa nib tuille biscuits
- A plated Eton Mess with pipped french meringues, pate de fruits, a quenelle of vanilla cream, strawberries and basil
- Earl Grey and Orange Sticky Toffee Pudding to take home with creme anglaise and a sticky toffee sauce
(Please note, we reserve the right to alter the dishes covered in our patisserie courses to meet the dietary requirements of our guests. The photographs are of dessert dishes produced by Will Torrent and are not images of the actual desserts on the day).
Techniques learnt
- How to present a beautiful plated dessert, including how to quenelle
- Making piped meringues
- Making pate de fruits – a set jelly with fruit and pectin
- How to make a chocolate mousse
- Making tuille biscuits
- How to make Crème Anglaise and a sticky toffee sauce
Throughout this dessert course you will enjoy the plated dessert and the chocolate mousse on the day (lunch will also be included). In addition you will leave with a sticky toffee pudding to take home with you including toffee sauce and creme anglaise. The desserts course with Will is designed to give you confidence in using all of these techniques again at home. The aim is that you can go home and repeat the desserts for family and friends time and again.
Your chef tutor
Will Torrent is an award-winning pastry chef who trained under Heston Blumenthal. Highly regarded in his field, Will graduated with first degree honours as well as winning Young Chef of the Year in 2009. His other achievements include winning the World Skills UK Outstanding Achievement Award and the first Medallion of Excellence for a British pastry chef at World Skills Japan.
Will has made many TV appearances, including being a regular presenter on Channel 4’s Sunday Brunch and ITV’s This Morning. He is the author of three popular baking books, including ‘Patisserie At Home’ in which his no-nonsense approach to the techniques in patisserie has earned it high praise. Will has worked with some of the world’s finest chefs and his passion for desserts, patisserie and chocolate alongside his extensive experience and friendly style will ensure you have a busy day learning in an enjoyable environment.

2 | Meet & Greet the Chef
Meet your dessert tutor and teacher for the day, Will Torrent, author of Afternoon Tea at Home, Chocolate at Home and Patisserie at Home. |

3 | Pate de Fruits
Learn how to make these set fruit jellies, suitable as a petite fours or as a garnish to a dessert and also a lovely present for someone. |

4 | Meringues
Learn how to make and pipe french meringues, which are a great stand alone dessert in their own right and a great technique to have in your baking repertoire. Chocolate Mousse Chef Will will teach his signature chocolate mousse which will go in the fridge to set whilst we create the other garnishes for your chocolate plated dessert. |

5 | Tuille Biscuits
Tuille biscuits are traditionally a thin french wafer biscuit. Once mastered they are easy to adapt to different flavours and either enjoy as a biscuit in their own right or serve with a dessert or pudding.

6 | Lunch
Enjoy lunch created for you by the Seasoned team whilst you chat to other dessert lovers and your Chef Will. |

7 | Sticky Toffee Pudding
We’ll return to the kitchen to prepare our Sticky Toffee pudding which you’ll be taking home with you at the end of the day. Will will chat through how to vary the flavours using the same technique, perhaps a marmalade or a coconut and lime version in the future?! Plate up your Eton Mess After the meringues are out of the oven, we’ll be plating this up in restaurant style to enjoy as your ‘first’ pudding! |

8 | Creme Anglaise
Make this classic dessert accompaniment in pairs and take this home to enjoy with your sticky toffee pudding in your own homes. Plate up your Chocolate Mousse and enjoy this as your second pudding of the day The happiest goodbyes are those that end with cake! Leave the warmth and hospitality of the Seasoned kitchens armed with lots of new skills and knowledge to use across your desserts at home. |
About your day
Our dessert courses take place on the Catton Hall Estate. On the picturesque Derbyshire and Staffordshire border, we are only minutes from the A38. We also have plenty of free parking.
You’ll have the support of our “kitchen fairies” who’ll ensure you have everything you need. We’ll provide an apron for the day, and all the equipment and ingredients.
Your day includes a delicious light lunch served with wine or soft drinks.
Our desserts day courses run from 10.15am to 4pm. Join the team for early morning refreshments from 10.00am.
Book your place
Will is much in demand, both around the UK, and when he is here at Seasoned and there is courses tend to get booked very quickly when we release them, so we’d recommend booking as soon as you can.
Lunch and refreshments throughout the day are provided, alongside equipment you may need. Please let us know when booking your place if you have any dietary requirements, allergies or are vegetarian so we can accommodate you.
