About the Course

This one day Culinary Masterclass will teach you key skills every chef should have in their repertoire. You will learn how to fillet a fish, simple butchery techniques, how to make a delicious sauce, plus a skills based dessert. 

This course will taught by, Craig Floate an expert chef with a wealth of knowledge. A highlight in Craig's career was having the opportunity to cater for the Olympic sailing team at the London 2012 games. Craig is a passionate chef who is looking forward to sharing his knowledge with all those who attend. 

Techniques you will learn on this Culinary Masterclass: 

- How to fillet a fish 

- A simple butchery element e.g ballotine of chicken

- A skills based dessert

- A classic sauce 

Suggested recipes on this Culinary Masterclass:

- Pan fried breast of pigeon, crispy pancetta, cauliflower puree

Pan fried mackerel, beetroot and horseradish

- Ballotine of Chicken with a wild mushroom and tarragon farce

- Chicken Stock

Vanilla panna cotta, poppy seed tuille

The perfect cookery course for ... people who want to take their cooking 'up a gear' and a good introduction to people who want to elevate their cooking at home and learn techniques that they can use to wow dinner party guests with different dishes.

Lunch is provided on all Seasoned cookery courses as well as all equipment and aprons to use for the duration of the course. Most of the food will be consumed on the day and you will leave with the knowledge to recreate it all at home.

Our Culinary Masterclass takes place at our cookery school on the Catton Hall estate on the Derbyshire / Staffordshire border. With ample free parking our location is easy to find & within easy reach of Leicester, Birmingham and other major conurbations.

Please inform us when booking onto the course if you have any allergies, dietary requirements or are vegetarian.  Please note however that we are not always able to cater for severe dietary requirements.
