Course Overview

Is there any occasion that isn’t made better by tasty cakes, bread or pastries? Imagine serving up your own handmade Battenberg, or an incredible six strand plaited loaf. Tea time will never be the same again! We are delighted to have Ruth Clemens, a Great British Bake Off finalist, joining us at Seasoned to teach this highly enjoyable creative baking class. By the end of the day, Ruth will have you baking, kneading and piping like a professional. Taking place on the gorgeous Catton Hall Estate in the stunning Derbyshire countryside, this course will be a truly memorable experience.

Recipes learnt

Throughout the day, you will cook all of these delicious bakes to take home with you:

  • A six stranded plaited loaf of bread
  • A lovely light rose and raspberry flavour Battenberg cake
  • Tasty leek and potato pasties (miniature size)

  • Enriching dough
  • Proving bread
  • How to knead bread dough correctly
  • Shaping bread (including plaiting an impressive six strand loaf)
  • Creating light sponges
  • Making the perfect shortcrust pastry for both sweet and savoury dishes
  • Combining flavours when baking
  • Creating an authentic Battenberg cake

This day long course is designed to give you total confidence in using all of these techniques. The aim is that you can go home and repeat the recipes for family and friends time and again.

Your chef tutor

Ruth Clemens is the perfect master chef to teach this course, not least because she was a finalist in the Great British Bake Off in 2010. She runs a popular food blog called The Pink Whisk, which showcases her amazing baking style. You’ll find everything from dulce de leche chocolate brownies to outrageously colourful Funfetti cakes are featured here. Ruth has also written three books on cookery, including ‘The Pink Whisk Guide to Cake Making’. Much of her work, both online and in print, is designed to help busy bakers create perfect cakes and pastries when they are pressed for time. Her creativity, technical expertise, charm and knowledge make her the ideal person to lead this creative baking class.

About your day

Our baking courses take place on the Catton Hall Estate. On the picturesque Derbyshire and Staffordshire border, we are only minutes from the A38. We also have plenty of free parking.

You’ll have the support of our “kitchen fairies” who’ll ensure you have everything you need. We’ll provide an apron for the day, and all the equipment and ingredients.

Your day includes a delicious light lunch served with wine or soft drinks. Please bring three large containers so you can take home your delicious creations.

Our day courses run from 10:15am to 4pm. Join the team for early morning refreshments from 10am.
