Recipes learnt
Throughout the day, you’ll prepare all of these delicious side dishes and sauces to take home with you:
- A Classic gravy to go with a variety of different meats
- Traditional stuffing and a vegetarian stuffing
- Cranberry sauce
- Pigs in blankets
- Brandy butter
- Honey roasted parsnips
- Braised red cabbage
Also on the day you will make and enjoy:
- The perfect roast potatoes
- A festive roast
- Brussels sprouts and pancetta
During the day you’ll sit down with the group to enjoy a festive feast, along with some of the accompaniments that have been made during the morning. It’s a great chance to share your festive cooking hints and tips with the group, not to mention a delicious lunch accompanied with a glass of wine or soft drinks.

Techniques learnt
- Making flavoursome gravy from scratch and without lumps
- Making cranberry sauce, with ideas on variations to the flavours
- Creating stuffings for meat eaters and vegetarians
- Preparing pigs in blankets ahead of the time
- The perfect roast potatoes
- How to cook, carve and rest a cockerel or a turkey

Your chef tutor
This sauces and sides cooking class is taught by one of our team of expert local chefs. With many years of experience between them, covering everything from top restaurant service to catering for royalty, you’ll be in the hands of experts. They are all passionate about teaching aspiring chefs and home cooks and make the day a fun and vibrant experience. If you’re looking to learn professional tips and techniques for making your sauces and sides unforgettable this Christmas, then this is a day for you.
About your day
Our one-day courses take place on the Catton Hall Estate. On the picturesque Derbyshire and Staffordshire border, we are only minutes from the A38. We also have plenty of free parking.
You’ll have the support of our “kitchen fairies” who’ll ensure you have everything you need. We’ll provide an apron for the day, and all the equipment and ingredients.
Your day includes a delicious light lunch served with wine or soft drinks. Please bring three large containers so you can take home your delicious creations.
Our day courses run from 10:15 am to 4 pm. Join the team for early morning refreshments from 10 am.
