Recipes learnt
Throughout the day, you will cook all of these delicious recipes. You’ll take home the breads you make to enjoy throughout the Christmas season:
- Brioche – an orange and cranberry enriched loaf with a rich and tender crumb
- Stollen – a delicious fruit bread made with brandy soaked raisins and homemade marzipan
- Christmas focaccia – focaccia for your left over Christmas roast – studded with ham hock, roast potatoes, stuffing and chistmas herbs, this is an all time favourite in our houses.
- Grissini – delicious breadsticks which will be enjoyed for lunch with a festive spread
(Please note, we reserve the right to alter the dishes covered in the course, to meet the dietary requirements of our guests).
Techniques learnt
- The essential bread making techniques including enriching, kneading, proving and shaping
- How to shape bread into ‘free form’ loaves and shape bread for cooking in tins
- How to use a pre ferment to enrich the flavour of your breads
- How to make homemade marzipan
This unique day-long course is ideal for those wanting to expand their bread making repertoire under the guidance of an expert baker. You’ll go away with the knowledge to recreate each one of the recipes time and time again, along with ideas from Andy on alternative flavour combinations.

Andy Tyrrell is a font of all knowledge when it comes to all things bread. His expansive knowledge of different doughs and techniques means that participants of his courses leave inspired and able to recreate recipes at home. Andy’s great love for the traditional techniques of bread enables him to be creative with flavours but precise with technique. 1 | Welcome
Arrive at the cookery school and be greeted by our kitchen fairies who will welcome you with a drink and freshly baked biscuit or festive goodie.You can have a look through your recipe pack for the day, get to know your fellow bakers, discussing your favourite Christmas bakes. |

2 | Introductions
A font of all knowledge in bread making, Andy Tyrell, will be taking you through this Christmas Baking course.As former head chef at River Cottage, Andy has extensive knowledge of all things bread and you will go home with skills you can use throughout the year. |

3 | Foccacia
A traditional Italian flat oven-baked bread that is perfect as a tear and share bread.A particularly wet dough made with olive oil, that can look quite intimidating when first attempting it but is immensely versatile. |

4 | Grissini
These crisp, baked, pencil sized sticks are perfect for dips and make a great snack.You will be hand stretching your olive oil dough to make these rustic, Italian sticks that you will enjoy over lunch with dips prepared by our kitchen fairies. |

5 | Lunch
Enjoy a light lunch in our dining room prepared by our kitchen fairies. |

6 | Brioche
French in origin, Brioche is a soft dough enriched butter and egg which give it a rich and tender crumb.We will be using the traditional flavours of Christmas, orange and cranberry within our dough.Once mastered, this dough can made into numerous baked creations from burger buns and sandwich loaves (think french toast in the morning) to cinnamon rolls.A very versatile dough. |

7 | Stollen
Christmas baking wouldn’t be complete without a classic German Stollen.More of a yeasted cake than a bread which is studded with nuts, spices and dried or candied fruit, Andy will teach you how to incorporate all the ingredients to obtain that bread-cake-like texture and get that all important delightful marzipan centre. |

Make sure you bring your containers as you will be taking home an abundance of baked goodies and the knowledge to create your bakes at home. |
About your day
This unique festive baking course takes place on the Catton Hall Estate. On the picturesque Derbyshire and Staffordshire border, we are only minutes from the A38. We also have plenty of free parking.
You’ll have the support of our “kitchen fairies” who’ll ensure you have everything you need. We’ll provide an apron for the day, and all the equipment and ingredients.
Your day includes a delicious light lunch served with wine or soft drinks. Please bring three large containers with you so you can take home your delicious creations.
Our day courses run from 10:15 am to 4 pm. Join the team for early morning refreshments from 10 am.
