Chocolate course

About the Course

This one day chocolate course will show you how to master the techniques of working with chocolate, enabling you to confidently recreate a variety of chocolate treats at home. Throughout the day you will learn how to temper chocolate, make chocolate ganache, and make chocolate shells and decorations.

Your chef for this course will be Barry Colenso. Barry is a Chef Patissier and previously Master chocolatier at Thorntons Chocolates.  One of Barry's career highlights was creating the royal chocolate cake for William & Kate's wedding.  Barry is a true expert and is extremely passionate about sharing his chocolate expertise with like minded enthusiasts.

Throughout this one day chocolate course you will learn: 

- The origins of chocolate - how chocolate is grown and produced - from 'Bean to Bar'

- To appreciate chocolate from around the world with a tutored chocolate tasting

- How to temper chocolate perfectly

- How to make a chocolate ganache and flavour this

- Make chocolate shells using a mould

- How to make hand cut and dipped chocolate truffles 

- How to make chocolate decorations including cigarillos and shards used for decorating chocolates, cakes and desserts

The perfect chocolate course for ... those who want to make their own chocolates for friends and family or want to add a new skill to their baking repertoire.

Lunch is provided as part of this one day chocolate making course as well as all equipment and an apron to use for the duration of the course.  For this chocolate course we do ask you bring 2 large containers with you so you are able to take your delicious hand crafted chocolates home with you.

This chocolate course is held at our cookery school which is located in the grounds of the Catton Hall estate in South Derbyshire. There are excellent transport links from neighbouring conurbations such as Nottingham, Leicestershire, Derby and Birmingham.
