Overview of the Course
If time is short but you want to pull out a showstopping bake then this patisserie course is for you. We will be using an array of pre-made ingredients – from pre-made pastry to chocolate spheres and shop bought cookie dough to make some delicious bakes. With time being saved on the basics we will then focus on some tips and tricks for finishing your bakes.
This will be a fun and fast paced day with like-minded bakers. Led by Will Torrent – a professional and award-winning patisserie chef we will learn the tips and tricks from professional bakers to create crowd pleasing bakes when you are short on time. The Seasoned team of kitchen fairies will look after you on the day – from pre-weighing your ingredients to doing your washing up, so you can focus on enjoying the day.

During the cheats patisserie course, you will cook all of these delicious bakes to take home with you:
- Will’s signature frangipane tart with seasonal fruit
- Peanut Butter & Raspberry chocolate brownies on a biscuit base
- Portuguese custard tarts
- Orange & cinnamon palmiers (demonstration)
- Praline Chocolates

Techniques learnt during the Cheats Patisserie Course
- Using shop bought shortcrust & puff pastry to create a large tart & smaller individual tartlets with a professional finish
- Making a multiple layer brownie
- How to make frangipane and creme patisserie
- How to make palmiers
- Create a chocolate ganache to pipe into pre-made chocolate spheres & cap these to produce professional grade chocolates in minutes
- Different finishing techniques to jazz up your bakes
This day-long patisserie course is designed to give you total confidence in using all of these techniques. The aim is that you can go home and repeat the recipes for family and friends time and again.
Your chef tutor
Will Torrent is an award-winning pastry chef who trained under Heston Blumenthal. Highly regarded in his field and is a regular presentor on Channel 4’s Sunday Brunch and ITV’s This Morning. Will is the author of three popular baking books, including ‘Patisserie At Home’.
With such a background in patisserie and chocolate Will knows the ‘time hacks’ that busy chefs use to create impressive and crowd pleasing bakes when they are short of time. This course aims to bridge the gap between the aspirations of the busy home baker who wants professional results even when short on time. Will also runs our patisserie course which is perfect for beginners and professionals alike, just without the cooking hacks.
About your day
This cheats patisserie course takes place on the Catton Estate in South Derbyshire. On the picturesque Derbyshire border just next to the River Trent we are only minutes from the A38, so easy to find & travel to.
Throughout the day the Seasoned team will ensure that you have everything you need – from pre weighing your bakes to providing all the equipment, aprons and recipes that you need.
Your day includes a light lunch served with wine or soft drinks. Please bring three large containers so you can take home your delicious creations.
Our cheats patisserie day courses run from 9.30am to 5pm. Join the team for early morning refreshments from 9.15am.
