- How to bake bread in tins as well as ‘free formed’ loaves shaped by hand
- How to create sweet and savoury bread
- Understand how to make bread using pre-ferments
- How to create delicious, versatile flavour combinations which can be adapted at home
- How to work with a wet dough e.g Ciabatta to give you confidence making Italian style breads at home
This day long bread course is designed to give you total confidence in using all of these techniques. The aim is that you can go home and repeat the recipes for family and friends time and again.
- A traditional ‘loaf’ that can be made in a tin / free form and varied with a selection of flours to make a range of flavours
- Cinnamon rolls
- Sourdough pizza to be enjoyed for lunch
It’ll be a good introduction to both sourdough and yeasted breadmaking. Also showing that one basic dough can make lots of different types of bread. The making of ciabatta will show the customers how texture of dough can greatly vary, but it still makes great bread and not to throw a load of flour to it.

Andy Tyrrell is the perfect master chef to teach this course, with his love of traditional cookery techniques and seasonal food. He has a particular love of sourdough, from starter to finished loaf. His creativity, technical expertise and knowledge make him the ideal person to lead this bread making course.

After driving through the picturesque Catton estate, you will be welcomed by our friendly team with a drink and homemade biscuit.
Get to know more about Andy Tyrell, your Chef for the day. Andy is passionate about bread making using traditional methods and is full of hints and tips to get the best breads from your kitchen.
Your day will start with an introduction to yeasted bread making and how to create a sourdough starter. Andy will show you how to make a pre-ferment for your first loaf of the day and the advantages of using these in your baking.
An essential loaf in any household but packed full of flavour by using a pre-ferment. Discover the importance of handling the dough, what to look for when kneading it, how and where to prove it, shaping it and finally baking to perfection for a beautiful loaf structure.
A crispy, chewy open textured Italian bread that is a miracle to behold as you are making it. A completely different technique to your farmhouse loaf using a ‘wet’ dough and little kneading.
Sourdough pizza base has an amazing depth of flavour and is fantastic to make with children in a relatively short amount of time. Using Andy’s own sourdough starter you will make your own pizza dough, hand shape it, select your own toppings and eat it for lunch!
Enjoy your sourdough pizza in our dining room with your fellow bread makers over a glass of wine.
Enriched doughs are made with additions such as butter and eggs to make them soft and rich. You’ll find out how to create delicious flavour combinations for your dough which you can use at home in your own bakes. Once you have prepared your dough you will move onto making the filling. Then it’s onto the task of getting that all important swirl for your buns.

You will leave us with three delicious bakes to take home and enjoy together with a comprehensive recipe pack covering pre-ferments and sourdough starter so that you can create these breads and more again.
About your day on our bread making course
Our cookery courses take place on the Catton Hall Estate. On the picturesque Derbyshire and Staffordshire border, we are only minutes from the A38. We also have plenty of free parking.
You’ll have the support of our “kitchen fairies” who’ll ensure you have everything you need. We’ll provide an apron for the day, and all the equipment and ingredients.
You’ll be sitting down together during the day to eat the dishes you’ve created. We’ll also provide wine and soft drinks.
Our day courses run from 10.15am to 4pm. Join the team for early morning refreshments from 10am.
