What's on the Seasoned team's Christmas Dinner Menu

What are you cooking for this years Christmas Dinner? Are you having the full trimmings with a traditional turkey? What about a succulent joint of beef? Or are you a vegetarian and having an alternative Christmas dinner? This has been a big topic of discussion at Seasoned, as each member of the Seasoned team is preparing, planning and hoping to execute  a tip top Christmas dinner that will wow their family & friends.


Let’s see what each member of the team will be cooking up!!

Seasoned Cookery School



Katie Brooke, Seasoned Cookery School Manager is yet again pulling out all the stops, cooking both a traditional turkey & a slow roasted blade of beef with red wine gravy. Each served with their only delicious trimmings which include roasted shallots, fondant potatoes, roasted carrots & parsnips, yorkies, roasties  & who could forget scrumptious shredded brussel sprouts with smoked pancetta and chestnuts.  Katie is cooking for 8 people this Christmas. To top this off Katie will be creating a spiced apple & cinnamon cake with apricot puree &  candied almonds.

Clare Major, Seasoned’s Founder is hosting a Christmas for 12 lucky friends & family who will be enjoying a delicious rib of beef, colourful beetroot dauphinoise, roast potatoes, shredded brussel sprouts with smoked pancetta, all topped with a succulent red wine gravy. For dessert Clare has created an alternative iced christmas pudding served with sweet roasted plums.

Chief Kitchen Fairy Tania, has a Christmas dinner planned for 16 people!! Like Katie Tania will be cooking a turkey & a blade of beef served with pigs in blankets, and a variety of vegetables! For pudding Tania has decided to have a traditional Christmas Pudding & a chocolate pudding for the chocolate lovers!

As for myself I will be living up to my Seasoned name of Chief taster & sous chef, helping my mum cook Christmas dinner for 20 people. On the menu will be Hereford Beef, a traditional turkey with pigs in blankets, served with an array of vegetables, roasties, and a variety of mixed exotic mushrooms which will include shiitake, maitake, King Oyster & Shimeji!
