It was great to welcome back 2011 BBC Masterchef finalist Jackie Kearney, to Seasoned on Tuesday for another fantastic day of cooking Malaysian & Thai Cuisine.

 

Jackie Kearney is extremely passionate about Malaysian & Thai Cuisine, having travelled around Asia, Jackie has learnt how to cook traditional dishes and picked up some secret tips to create the perfect Malaysian & Thai dishes.

On Tuesday we had 13 enthusiastic guests attend the Malaysian & Thai Cuisine course with Jackie. The day started extremely well with demonstrations including, Murtabak –  a delicious street food style snack & spicy tom yum hot and sour soup. The customers then had the opportunity to have a go a preparing and cooking the dishes for themselves to enjoy at lunch.

Throughout the morning Jackie was on hand, helping out with techniques, seasoning & perfecting the dish in true Malaysian & Thai stye.

In the afternoon customers then created a tasty traditional Pad Thai, which is a quick & easy stir fry dish full of versatile flavours, textures & colour.

Once all the dishes had been made Jackie demonstrated how to make a Thai green curry paste. This was then used for the Sweet potato & green bean Thai green curry, Jackie made more than enough so that everyone could take a sample home with them.

Jackie then demonstrated a deliciously tender Beef Rendang & a tasty green jackfruit rendang, both authentic Malaysian dishes.

Dishes on the day included:

  1. Delicious Beef rendang
  2. Tasty Green jackfruit rendang (vegetarian)
  3. Chilli sambal, a fiery hot dipping sauce
  4. Spicey Tom yum hot and sour soup
  5. Thai green curry paste
  6. Traditional Pad Thai
  7. Murtabak, Malaysian stuffed crispy pancake
