With Christmas fast approaching this Iced Christmas pudding is a delicious & prepare ahead version of the Christmas classic. Make in advance & serve with some lightly poached plums in mulled wine & your guests will be coming back for more.
ICED CHRISTMAS PUDDING
- ¼ pint milk
- 4 oz. Marshmallows
- 1 teaspoon cocoa
- 1 teaspoon instant coffee
- 2 oz raisins 1oz currants, 1oz sultanas
- 2 tbsps sherry/brandy
- 2 oz maraschino cherries
- 2 oz chopped nuts
- 1/2 pint double cream whipped
Method for this Iced Christmas Pudding
Mix dried fruit with alcohol & allow to stand for 30 minutes.
Put the milk, marshmallows, cocoa, coffee powder in saucepan and gently heat until marshmallows are nearly melted. Set aside to cool.
Add fruit mixture to marshmallow mixture along with diced cherries and nuts. Mix well & thoroughly.
Freeze the mixture for a short time until slightly thickened.
Fold the whipped cream into this mixture and pack into a chilled basin. Freeze until firm. Will freeze for a month.
Turn out & decorate with plums if liked.
Keep in fridge for approx ½ hour before serving.
Best served with plums, quartered & then lightly poached in mulled wine. Remove the plums & then continue to reduce the syrup to a glaze or the desired consistency.
- Best served in small containers, the ice cream sets quickly so less ice crystals
- When turning out, leave at room temperature for 15 minutes so the outside slightly melts & the ice cream will simply slide out
- Great for using up cream
- For children you can simply omit the brandy & the coffee and this will be a crowd pleasing dessert for the whole family
- Also delicious as an accompaniment to other poached fruits
There are several versions of Iced christmas pudding, some as simple as buying vanilla ice cream and stirring in shop bought Christmas pudding, but we think that slightly misses the point! This recipe combines fluffy marshmallow, a hint of coffee and boozy rum / brandy along with lovely mixed fruit to give you a real taste of Christmas. We hope you enjoy as much as we do.
