If you’re giving up chocolate for lent this year, try this tasty granola bar recipe which is a perfectly delicious substitute. This delicious granola bar is the perfect homemade treat to put in your lunch box, or to give your children as a tasty treat. A perfect blend of nutrition and tastiness. We used Jordans Cereal as the main ingredient in these bars.
Each time you make these tasty treats, you can change the flavours. Add 100g of desiccated coconut to give a coconut taste, or add 50g of stem ginger in the apple mixture to for a delicious Apple and Ginger granola bar. If you love Jordans Cereal as much as we do, you could also take some tinned cherries & Jordan’s Cherry & Almond granola for a delicious cherry bake.
How to Make Cereal Bars
- 450g of Jordan’s Almond & Hazelnut granola
- 16 large medjool dates, pitted
- 200g stewed apple (or other stewed fruit, rhubarb works well, as does apple & ginger)
- 400ml hot water
- 200g of extra raisins & seeds/nuts as desired (sunflower seeds, pumpkin seeds & mixed fruit all work well)
- 2 tablespoons of coconut oil
- 4 tablespoons of chia seeds mixed with a cup of water
To start, mix the chia seeds with water until they soften and turn into a frogspawn type consistency.
Put the dates before putting them into your blender, add stewed fruit, and hot water. *This is when you would add the coconut oil too if using. Blend until combined.
Place the mixture into a bowl, adding all the other ingredients.
Ensure to line your baking tray (8 inch square), and spread the mixture using the back of a spoon. Ensure your oven is preheated at 180 degrees and put the mixture in the oven for 40-50 minutes dependent on your tin size – They start to go golden brown in colour.
Before eating, allow to cool, and then cut into even squares using a sharp knife.
The bars should be stored in the fridge, in an airtight container.
