British Food Fortnight has begun & we’ve created a deliciously British carrot soup just for you!! British carrots can be brought throughout the UK nearly all year round, with the carrot season starting in the middle of June and ending in May.
Delicious Carrot Soup Recipe
At Seasoned we love to cook with seasonal and local produce from the UK and nearly all produce used on our courses are locally sourced or supplied from local producers and business. We’ve created this extremely colourful deliciously fresh carrot, lime and coriander soup. It’s super quick and easy, and can be created in around 30 minutes.
Ingredients
2 tbsp vegetable oil
2 onion, finely sliced
900g, finely chopped
2tbsp ground coriander
2 cloves of garlic peeled & crushed
2.4 litres vegetable stock
large bunch fresh coriander, roughly chopped
2 fresh limes
single cream to serve
salt and freshly ground black pepper
Method

Heat the oil in a large pan and add the onions, garlic and the carrots. Cook for 4 minutes until they are starting to soften.

Add the ground coriander and season well with Salt & pepper. Cook for 1-2 minutes.

Add the vegetable stock and bring to the boil, leave to simmer for about 20 minutes until the vegetables are tender & soft.

Once the vegetable are tender stir in the fresh coriander.
- Take the soup of the heat and allow to cool.

Once cooled whizz with a hand blender or in a blender until smooth.

Reheat to serve

Stir in the fresh coriander, a squeeze of lime and single cream to serve.
