How long have you worked with Seasoned, and what do you teach?

I have worked with Seasoned for three years. I teach a range of Patisserie courses and a chocolate course too.

 

Alongside teaching at Seasoned, what else do you do?

As well as my teaching, I eat chocolate daily… I can’t help it, it’s just all around me!

 

What is your favourite cookbook & why?

Oooh, that is tough. I would have to say Indulge by Claire Clark. It is my absolute go to cookbook.

 

If you could have any dish in the entire world, what would it be?

That is easy, I would have the Raspberry Souffle from The Waterside. It is absolutely delicious, and I can’t get enough of it.

 

Now Will, we know you like chocolate, but what is your favourite chocolate?

I like a chocolate which is versatile, but is really tasty. For me, I love Guittard. It ticks all the boxes.

 

As a child, did you always know you wanted to be a patisserie chef?

I always loved baking, but I did want to be an actor for some time.

 

What was your favourite thing to cook as a child?

That is an easy one, I used to love cooking my nan’s chocolate fudge cake, it was so delicious, it has stuck with me. It even features in my book, Chocolate at home.

 

And finally, after a few days teaching at Seasoned, what would be your favourite tea & treat?

Now I love sweet food, its incredible, but after two days of teaching all about baking, there is nothing better than some fish & chips. I would accompany this with an ice cold beer.
