Tim Maddams has been teaching our fantastic Game Cookery Course at Seasoned Cookery School for 3 years, and this year we thought it would be great if we could showcase more of Tims talents, knowledge & expertise by teaching an Artisan Food course.
Tim is extremely passionate about ethnical, sustainable and seasonal produce & this January Tim taught our first Artisan Food course – an introduction to bread, cheese, pasta, relish making as well as hot smoking.
On Saturday 16th January we welcomed Tim Maddams back to Seasoned Cookery School. Tim, who previously worked at River Cottage as Hugh Fearnley-Whittingstall’s Head Chef, is passionate about seasonal & sustainable food and thrives of teaching & talking to others about the importance of locally sourced and sustainable foods. Tim’s courses are laid back, yet extremely informative and he has a very friendly and approachable manner, making everybody feel relaxed and welcome.
On our Artisan Food course each customer learnt a variety of skills & techniques. This included making fresh focaccia bread from scratch, how to make a deliciously simple curd cheese with fresh herbs & seasoning, accompanied with a delicious seasonal relish. Tim taught the guests a basic hot smoking technique which was used to smoke delicious fresh trout on the day; however this versatile technique can be used on a variety of different meats & fish. Another great skill that Tim taught on the course was how to make hand rolled pasta from scratch was was then made into a tasty cauliflower, chilli & garlic dish. All of the techniques taught on the day are extremely versatile and can be adapted at home to make use of your favourite seasonal ingredients.
