Tim Maddams; loves all things seasonal! That’s why he is the perfect chef to teach our ‘Wild Food’ & ‘Game cookery’ courses, which are both held at our kitchens in South Derbyshire.

Tim is best known for his time as head chef at the River Cottage where he worked alongside Hugh Fearnley-Whittingstall. He is now in the process of writing his ‘Game’ cookbook, so keep an eye out for that!

What has been your top foodie discovery recently?

I think it would have to be my homemade celeriac salt! It’s really good.

Where is the best place you’ve eaten at recently?

The best place I have eaten in the last month is The Rusty pig, Ottery St Mary, east Devon.

What is your food heaven & your food hell?

Heaven; anything seasonal and cooked with care and passion my food hell is the opposite!

What have you got planned in the next month or two?

Loads of writing, I’m busy in the edit stage with two books and I’m planning another for the year after next. I’m also looking forward to popping up allover the country with my Hall and Hearty community dining project, enjoying the foraging and looking forward to some shooting and fishing.
