- A yeasted shaped loaf and fruit loaf

This day long baking class is designed to give you total confidence in using all of these techniques. The aim is that you can go home and repeat the recipes for family and friends time and again.
Your chef tutor
We are proud to have 2013 Great British Bake Off semi-finalist Beca Lyne-Pirkis teaching this baking course. Beca is a talented baker and creates a fun and friendly learning atmosphere, perfect for beginners. Beca is well known for her creative twists on flavours and the imaginative use of everyday ingredients. With the skills you learn from this course, you could be on your way to entering the Great British Bake Off for yourself!

|1||Arrival & meet the team
The Seasoned team will be ready to meet you, after your journey to the cookery school which is set within the Catton Estate on the Derbyshire / Staffordshire border.
Meet your chef for the day, Great British Bake Off finalist, Beca Lyne-Pirkis. Beca is an expert in baking and her enthusiasm and talent will ensure even the least confident of bakers will go home feeling confident in the kitchen.
Beca will demonstrate how to make the perfect yeasted dough, including the techniques of kneading, proving and resting before you have a go at creating your own. You will be using this dough to make 2 seperate loaves – just to show you the versatility of how a bread dough can be used. Once home you’ll be able to use this for many recipes including tin loaves, bread rolls and fruit loaves.
|4||Roasted Vegetable Tart
Beca will teach you how to make a delicious savoury pastry for your roasted vegetable tart. Beca will explain the importance of handling and resting it for that perfect, melt in the mouth pastry. Once rested, your pastry will be blind baked before adding your roasted vegetable filling, enhanced with spices for a Moroccan inspired tart.
Enjoy the chef’s vegetable tart with a glass of wine in our dining room with your fellow bakers.
|6||Fruit Loaf and Shaped Loaf
After lunch, your well rested bread dough will be divided to make two completely different loaves. To one half of the dough, dried fruit and spices will be added to make a fantastic sweet fruit loaf. The other half will be your very own GBBO inspired technical challenge – shaping your loaf using the plaiting technique!
|7||Jam & Honeycomb demonstrations
Take a little bit of downtime as Beca demonstrates how to make a tangy cherry jam to fill your swiss roll and honeycomb to adorn the top for that all important finish.
Another technical challenge! Beca will teach you the skills to make a beautifully light, sponge base for your swiss roll together with the technique to fill and roll it to get a delicious looking dessert for you to take home.

Armed with a new set of baking skills and knowledge, you will be able to impress your family and friends with your baked goodies and will hopefully have the confidence to recreate them at home in the future.
About your day
Our baking courses take place on the Catton Hall Estate. On the picturesque Derbyshire and Staffordshire border, we are only minutes from the A38. We also have plenty of free parking.
You’ll have the support of our “kitchen fairies” who’ll ensure you have everything you need. We’ll provide an apron for the day, and all the equipment and ingredients.
Your day includes a delicious light lunch served with wine or soft drinks. Please bring three large containers so you can take home your delicious creations.
Our day courses run from 10.15am to 4pm. Join the team for early morning refreshments from 10am.
