Tim Maddams is best known for his time as head chef at River Cottage and his popular appearances on Channel 4. His real passion lies with ethically produced, sustainable, locally sourced food which has been the inspiration and focus of his career to date.
Tim is extremely passionate about teaching and ethical food. Tim comments: "Food is a fascination for me; it's not just about good cookery. I feel strongly about the importance of knowing where your food comes from – the ethics behind its production and knowing the sustainability of the ingredients"

Tim Maddams is from Devon and travels to Seasoned in Derbyshire 2 or 3 times a year to teach his popular cookery courses. Tim enjoys the shooting, fishing and other country pursuits so his game cookery knowledge is first hand and second to none. Tim has also written a game River Cottage Handbook being published in 2015. Tim's game course is lively, informative, but not suitable for the squeamish or faint hearted!
Whilst at River Cottage Tim Maddams played a pivotal role in 'Hugh's fish fight' - the campaign for sustainable fishing. Tim is passionate about ethical food and sustainable fish, hence his sustainable fish course is a fantastic fish cookery course for those wishing to learn more about how to enjoy sustainable, ethically sourced fish.
Before teaching cookery courses, Tim's Background includes six years in London working for chefs such as Fergus Henderson, Alistair Little and Marco Pierre White for six years.
He then took the head chef post for the corporate sponsors of the Ferrari F1 Team where he cooked at every European Grand Prix for two years. He then decided that 2 years was enough and decided to return to his country roots where he married and decided to settle in the West country and shortly after started to work for River Cottage.
Most full day courses run from 10:00am until 4:00pm
