Throughout the day, you will cook all of these delicious bakes to take home with you:
- 1 batch of macaron shells
- A peanut butter cheesecake filling
- A chocolate ganache filling (demonstration)
- Savoury goats cheese and fig jam macarons (demonstration)
(Please note, we reserve the right to alter the dishes covered in the course, to meet the dietary requirements of our guests).

This half day course is designed to give you confidence to go home and practice all these techniques again. The aim is that you can go home and repeat the recipes for family and friends time and again.
Your chef tutor
Beca Lyne-Pirkis, 2013 Great British Bake Off semi finalist, will lead the course. Beca’s infectious enthusiasm has been passed down from generations as she grew up in a family who loved baking. Beca is now a very talented baker in her own right, perfecting traditional techniques, while also thinking outside the box to produce delicious new flavour combinations. With Beca’s caring personality, she makes the course achievable and gives learners confidence to recreate these bakes at home.
The fun and relaxed environment makes this course the perfect opportunity to learn from a chef who has such a passion for what she does. Beca will guide you into fulfilling all your macaron making aspirations.

1 | Arrival and meet the team The Seasoned team will be ready to meet you, after your journey to the cookery school which is set within the Catton Estate on the Derbyshire / Staffordshire border. |

2 | Introductions Get to know your chef tutor for the day, Beca Lyne-Pirkis, Great British Bake Off finalist and cookery author. |
||
3 | The Key to Macarons Beca will demonstrate and discuss all of the key techniques to make these notorious little delicacies. You will learn all the tips and tricks needed from egg size, to colouring and ‘the skin’ before you set to work yourself on your own macarons. |
||
4 | Macaron Shells Once you have learnt the tips and tricks of making macarons, you will begin to whip up your own mixture for your sweet macarons. |
||
5 | Ganache A beautiful, rich, glossy ganache is a staple in a bakers repertoire and can be used in many bakes from macarons to tarts and truffles. Beca will demonstrate how to make dark chocolate ganache and discuss how to elevate it using alcohol and flavourings. |

6 | Savoury Macarons Being the master at macarons, Beca will demonstrate how to make a savoury version for something a little different together with creating a savoury filling and assembling for that wow factor. These make a fabulous little canape if you are entertaining. |

7 | Filling your Macarons Make a chocolate bar inspired macaron with a peanut butter filling paired with the ganache made earlier.Or maybe try an American combination of peanut butter and jelly – our ‘jelly’ will be a raspberry jam which will be demonstrated by Beca. |

8 | Departure
You will leave us with a box of macarons you have made yourself together with additional recipes so that you can create macarons again. |
About your day
Our baking courses take place on the Catton Hall Estate. On the picturesque Derbyshire and Staffordshire border, we are only minutes from the A38. We also have plenty of free parking.
You’ll have the support of our “kitchen fairies” who’ll ensure you have everything you need. We’ll provide an apron for the day, and all the equipment and ingredients.
Please bring a containers so you can take home your macarons.
Our morning courses run from 9am to 12:30pm. Join the team for early morning refreshments from 8.45am.
Our afternoon courses run from 1.30pm to 5:00pm. Join the team for early afternoon refreshments from 1.15am.
