Gluten Free Orange and Coconut Cake
I found this delicious recipe on a fabulous UK Food Blog – Them Apples and have tried different variations.
It is delicious and easy to make. Another bonus is that it is gluten free and diary free.
250ml Orange Juice (Approximately 6 large oranges)
Zest of 2 oranges
250g Dessicated Coconut
300g Golden Caster Sugar
6 Eggs separated
4 tablespoons of Sunflower Oil
Mix the dessicated coconut and orange juice together and leave for 15-30mins until the coconut is soft.
Meanwhile grease and line a 8” or 10” cake tin and pre heat the oven to 180 C
When the Coconut has soaked add the egg yolks, the caster sugar and the sunflower oil. Mix thoroughly.
Beat the egg whites in a clean bowl until you reach really stiff peaks .
Fold in the egg whites gently to the coconut mixture and then transfer to the prepared tin.
Bake for 45 minutes until a skewer comes out clean.
Allow to cool and remove from the tin and serve.
A base of creamy egg will have formed on the bottom and the top will be a light, coconut mixture flavored with orange.
Other suggestions:
I’ve tried the cake with raspberries which was delcious, although the cake does appear much darker. Served with Icea cream and raspberry coulis it was delicious.
It is also perfect using a Mango and passion frui Innocent smothie instead of orange juice and then adding passion fruit on top of the end before you serve it.
