Easy Chocolate Truffles

This is a great recipe to make some easy chocolate truffles - whether you want to make them for a dinner party, for presents, or simply to enjoy at home.

You can vary the below recipe to make different flavours etc and have fun with toppings - Enjoy!

Ingredients

200g Plain Chocolate
2 tablespoons of Brandy (optional, or can be replaced with Coffee / Amaretto / Cointreau)
50g unsalted butter
100g Ground Almonds
100g Icing sugar sifted

To decorate
100g plain chocolate
50g white chocolate
100g mixed nuts (delicious if toasted lightly in a saucepan first, but be careful they don’t burn)
Desiccated coconut
Mixed fruit
Coco

Method

1)    Melt the chocolate in a ban marie – a heatproof bowl over a saucepan of simmering water.  When almost melted add the butter and Brandy.  Take off the heat and allow to cool slightly.

2)    Sift the icing sugar into a large bowl and add the ground almonds.  Add the warm chocolate mixture and mix well until it reaches a good consistency for shaping into balls, but still moist.

3)    Shape into balls and decorate as preferred.  They keep in an air tight container for a few days at room temperature.

Enjoy!
