Banana Cake Recipe
2 ripe bananas (overipe is best, then mashed well)
170g caster sugar
170g self raising flour
1 teaspoon bicarbonate of soda dissolved in 2 tablespoons of milk
170g soft margarine
3 eggs
Fewdrops vanilla essence / half a teaspoon of vanilla bean paste
Optional - 70g of chocolate drops (white and milk work well) or walnuts, finely chopped
Pinch of Salt
1. Firstly decide whether you want one large cake or two smaller loaf tins. Grease these and line them well.
2. Pre heat oven to 160C / gas mark 3
3. Cream the butter and sugar using an electric whisk
4. Add the beaten eggs, milk and soda and well mashed bananas
5. Add the flour, vanilla, salt and chocolate drops / walnuts if using
6. Pour into the prepared loaf tins and bake until the skewer comes out clean. Baking time will be c30mins for the smaller loaf tins or 45mins for the larger one.
