APPLE FRANGIPANE TART
Ingredients
Pastry
10oz plain flour sieved with a little salt
6 oz mixed butter and white fat
1 oz caster sugar
1 egg yolk with a little lemon juice and water
Filling
4 oz marzipan grated
30z butter
3oz caster sugar
1 ½ cooking apples peeled and grated
2 egg whites
Glaze 1 egg yolk mixed with a little water and sugar
Method
1) Line a 9” loose based flan tin with baking parchment and pre heat the oven 200 degrees C
2) Prepare the pastry by rubbing fats into the flour and then adding the egg, lemon and water to make a dough.
3) Chill for at least 20 minutes and then roll out to fit tin. Saving little pastry to lattice the top if desired.
4) Sprinkle the grated marzipan over the pastry base
5) Cream the butter & sugar and stir in the grated apple.
6) Whisk in the egg whites and then fold in carefully to the butter, sugar and grated apple mix
7) Spread the filling over the marzipan and then lattice top with the left over pastry
8) Glaze the top with egg mixture and bake in the oven for 45 minutes until golden.
9) Serve warm with cream or crème fraiche
